Dark Roast, Organic Wet-Hulled or Monsoon Malabar
We always use high-altitude, Wet-Hulled or Monsoon Malabar Process coffee beans for our dark roast, so that you get a bold but clean, crisp taste in your cup. As you may know, the Wet-Hulled Process is used mostly in Indonesia, so we are always on the look-out for excellent coffees from Sumatra, Bali, Java and Sulawesi. As you also may know, the Monsoon Malabar Process is used primarily in India and famously produces coffees with more spicy and herbal notes.
The flavor notes we aim to bring our when roasting as dark as we do are:
- Rich, bold coffee flavors
- Notes of caramel and caramelized sugars
- Occasionally a hint of dried fruits like apricot or blueberry
