We always use Swiss Water Process (or SWP. for short) decaf coffee beans for our Decaf Dark Roast, because it is the cleanest, most reliable way to decaffeinate coffee beans.
The Swiss Water Decaffeinated Coffee Corporation (contrary to what the name sounds like) is a Canadian corporation that oversees all the certified labs around the world that use the Swiss Water Process method to decaffeinate coffee beans for our consumption. It is an Organic, chemical-free process that takes a few days to complete, requiring sophisticated chemical testing equipment (photon spectrometers, that sort of thing). Generally, SWP coffees are more expensive than regular coffees and are at least 99% caffeine-free. Caffeine is a colorless, flavorless, odorless chemical, so when it is extracted from the coffee bean in this organic, chemical-free method, the decaffeinated coffee beans taste exactly the same as regular coffee.
